Fig.3 showed the fermentative properties of L.eu1426, L.p1121,in pure cultures and binary co-culture fermentation. The initial concentrations of sucrose, glucose and fructose, main sources of energy in Chinese sauerkraut fermentation, were about 27.0 g/L,3.4 g/L and 3.5 g/L, respectively. Different fermentations showed various metabolic features of substrates.
