Further, it was noticed that CHF-CA-3 exhibited
low ARP (38.04) but good reducing power (1.51 ASE/ml) comparatively. Further, study by Hern´ andez et al. (2012) also concluded
that Guajillo pepper extracts exhibited good antioxidant activity
and had the best scavenging capacity for the DPPH+ cation
(24.2%). DPPH radical scavenging activity in extracts of different
colored peppers under study varied from 2.2% to 52.3%. Also, the
green pepper contained a greater level of phenolics and showed
higher scavenging activity.
