When processing headed and gutted carp, results demonstrated that the FBSM machine throughput was approximately 80 kg of minced flesh per hour. This capacity was the lowest value recorded. Other factors that need to be considered are fish size and thickness of fish and bones structure. Based on catalogue value, the throughput of RBM is 500 kg/h, step operation. This capacity was reduced to 200 kg/h because it was necessary a double pass operation in order to reduce bone content.
