Thirteen strains of L. plantarum were used in this study. All test
strains were isolated from fermented vegetable with antimicrobial
activity against E. coli O157:H7 DMST 12743 and S. Typhimurium
ATCC 13311. The strains were preserved in MRS broth (Merck,
Darmstadt, Germany) containing 20% (v/v) glycerol at -20°C. For
routine analysis, the strains were subcultured twice in MRS broth to
maintain freshness.
