3.2. Fatty acid profile of basal diet and sprouts
Differences in the fatty acid profiles of basal diet and sprouts are
shown in Table 2. The alfalfa and flax sprouts had higher PUFA concentrations
than the conventional feed; in particular, linoleic acid (38.46%)and linolenic acid (70.05%) levels were highest in alfalfa and flax
sprouts, respectively. Palmitic and stearic acid levels were higher in
the conventional feed than in the sprouts.
