(Fig. 2). Interestingly, rice cooked in optimal water at 15 min absorbed the highest
amount of 2-AP (3.65 ±0.03 μg). This result might be explained by the fact that complex of starch and 2-AP disrupted after the first transition and there were considerable molecular rearrangements occurring
with rice starch granules before they were disrupted again by increasing hydrothermal treatment at
96.7°C.
