Maltodextrins are hydrolyzed starches that have been used as effective wall materials in spray drying to protect sensitive materials against oxidation (Desobry et al., 1997). BGR flour (from milled broken rice) is a major source of starch, which can be produced as maltodextrin. Moreover, no previous work on using maltodextrin produced from BGR flour as a wall material for spray drying and freeze drying encapsulation has been reported.
