The papaya extract exhibited a significant decrease (p < 0.05) in
the TPC concentration: 79.5 ± 0.09e28.6 ± 0.03 mg GAE/100 g FDF
after in vitro digestion. FC exhibited a significant increase (p < 0.05)
after in vitro digestion with values of 15.9 ± 0.02 and
26.4 ± 0.004 mg CE/100 g FDF for the undigested and digested
extracts, respectively.
