This result suggests that the His content in FHP is crucial in ferrous chelation and antioxidation.
The antioxidant ferrous-chelating peptide fractions from hairtail obtained by enzymatic hydrolysis and ferrous chelation might be useful as food additives, diet nutrients and pharmaceutical agents.
