Sensory analysis was done on control, 75:25, and 50:50 DAMC: DAMB snack formulations. An untrained sen- sory panel consisting of 69 members from the scientific and administrative staff at WRRC-ARS-USDA in Albany CA, ranked the three starch-molded mango snack formulations from most to least preferred according to taste and ap- pearance. Starch-molded mango snack samples were cut in pieces of 2 cm.
