5. Conclusions
According to the influences of physicochemical and pasting of rice starch, as well as textural and rheological properties of rice starch gel with the addition of DF, it was shown that DF can have a significant effect on rice starch. Possible mechanisms involved the gelation of arabinoxylan and the water immobilisation of DF. Therefore, this research suggests a fundamental understanding of the effects of DF on rice starch. Furthermore, this research may be essential in tailoring cereal DF formula with certain physiological benefits or DF-enriched starch products with a desired texture and storage stability.
