What the ‘line of room service should be:
Room service number now set up at Boca. The new place for re set up the line should be at Eve.
Why?
- 6.00-12.00 we have enough staffs stand by for support breakfast including intern who have a well knowledgeable in F&B. During room service delivery food to guest room. Breakfast team can support with strong person.
Next step
- We will have gab of manning at Boca. At Boca will be only one staff stand by after moved phone number to Eve. That is not expected from HOD desired. What is should be?
- After fill full manning in breakfast team. The breakfast manager should assigned one staff to support Boca as a clock road every day or time to time on requirement from Boca team.
- 12.00 – 14.00 still have breakfast team standby. To re set and prepare equipment for the next day.
- 14.00 – midnight. Time to start of Eve team. This period should handover by Eve dinner team. For afternoon the room service will be the one in Eve manning. Uniform should be according Eve concept. During peak period Eve team can also support when second order happened in same time. The traffic will not happen at all.
Midnight – 5.00am.
- This period for the room service should closed and handover by FO team.
Why?
- As checked by time to time. The room service order not much during this period someday zero.
- If HOD agree to closed room service during this period. What pre planning should do?
^ Multi skill training In F&B should provide by HR department to FO team before kickoff closed. This is very important and strongly focuses. All multi skill in F&B should pass test by HR and agreed to start.
What the kitchen should do?
^ Night food menu should limited of sale item. (2 or 3 enough)
What F&B should do?
^ Night drink menu should limited of sale item. (Bottle only for sale such as soft drink, beers)
For protect guest complain
- Duty manager and FO team will automatic informed when arrival guest.
