The strains were isolated from the samples with/without mixed
starter cultures at different fermentation stages, and the isolates
were purified on the above mentioned culture media from all
growth strains at highest dilutions. The DNA of the LAB and
staphylococcus strains was extracted and 16SRNA gene sequence
analysis was carried out according to the method described by
Benito et al. (2008). Similarly, the DNA of yeast was extracted and
26 rRNA gene sequence analysis was performed as described by
Kurtzman and Robnett (1998).
