Start with cutting lemons in half. Reserve one half and use a citrus juicer you have in order to extract juice and get out the seeds. Take a large bowl and take a wire sieve over it. Pour lemon juice through the sieve. Strain it into a jug and one more time into a bowl.
Add sugar, one cup at a time and keep stirring the juice continuously. It is up to you to choose the level of bitterness and sweetness. Cut the lemon half into thin slices and make a few small segments out of each cut. Rip some mint leaves into several pieces.
Divide cordial between jugs, add water to fill vessels and leave the room for ice. Add mint and lemon pieces, and then serve.
