In industrial sector starch is an economical raw material as acarbon source. The combination of starch and amylo-lactic acidbacteria enhances the fermentation process and produce lactic acidin single step which reduces the cost of overall fermentation process. The main aim of the present study was isolating and screening of potential probiotic lactic acid bacteria and to detect theability of amylase production for the industrial application in bioprocessing and fermented foods, hence these lactic acid bacteriaare generally regarded as safe (GRAS).
