Thewater absorption capability of HMT canna starch was comparable to thatof native starch (0.8 g/g starch). The swollen HMT starches heated at 80–82 ◦C exhibited similar absorption capabilities (4.2–4.5 g/g starch),whereas the absorption capabilities of the frozen-swollen HMT starchesvaried between 3.8 and 4.4 g/g starch.
