to environmental stresses, such as the formation of biofilms.
In food industry, biofilm formation is undesirable for hygienic
and safety reasons due to the possible attachment of food spoilage or
pathogenic microorganisms to food or food surfaces. The formation of
biofilms by some species of LAB has been reported and several studies
have described genes responsible for adhesion or biofilm formation
