2.7. Lipid oxidation
The extraction of lipid from cake was done by using the modified method from AOAC 905.02 Rose-Gottlieb (AOAC, 1995). The extraction was measured for the conjugated diene hydroperoxide (Wrolstad, Decker, Schwartz, & Sporns, 2005a) and total carbonyl compound content (Wrolstad, Decker, Schwartz, & Sporns, 2005b) using spectrophotometric methods.
