Statistical analysis
Data collected from chemical testing and sensory evaluations were analyzed using S ver 18.0 for Windows statistical software(SPSs Inc., Chicago, Ill., U.S.A).
Multiple means comparisons for all chemical analysis were performed using two-way analysis of variance(ANOVA) with the significance level defined at P s 0.05. The Bonferroni post hoc test was applied to determine the significant differences between samples.
All chemical analyses were conducted in triplicate and were reported as the mean value of triplicates Before the data analysis, the rating for Labeled Hedonic Scale was measured from the bottom of the scale in millimeters and translated into a range from 0 to 200.
One-way ANOVA was used to analyses the data followed by Bonferroni test for post hoc examination of differences among means.
To prevent carry ove effects or order bias, a randomized balanced incomplete block design was used with each panelist tasting 4 samples(Plan 11.10 Type I; Cochran 14, 0.86, and Cox 1957)
