2.5.1. The determination of pH
A solid sample of 1 g was ground finely in a mortar and then soaked in 10 mL ddH2O for 30 min.
The filtered solution was used for measurement with a pH meter.
The liquid sample was directly used for pH measurement.
The solid samples included non-fermented and fermented pork jerky; and the liquid samples included the remaining fermented medium, and the medium before fermentation.
