Although several works are available in
literature on osmotic dehydration, the effects of
osmotic dewatering and oven drying has not
been carried out on yellow-fleshed sweet
potato that is common in tropical Africa.
The objectives of this study were to investigate the
effect of osmotic dewatering with sodium chloride
solution on moisture removal and diffusivity of
sliced yellow-fleshed sweet potato (Ipomea
batatas L.) and the effect on β-carotene content.
