Biocatalytic oxidative C–C double bond cleavage is a very interesting alternative to ozonolysis. Another example was given with vegetal oils, converted into valuable C6- and C9-aldehydes by the combined action of soybean lipoxygenase (LOX) and recombinant hydroperoxide lyase (HPL) (Noordermeer et al., 2002). Natural hexanal, (E)-hex-2-enal, and (Z)-hex-3-enal, commonly used for their green notes, could be obtained by this method from hydrolysed safflower oil (73% linoleic acid) and hydrolysed linseed oil (44% linolenic acid/20% linoleic acid).
