The solubility of all samples was determined by a centrifugation step for 30 min at 10,000g and the subsequent analysis of the supernatants via HPLC. A HPLC method according to Bordin, Raposo, de la Calle, and Rodriguez (2001) was applied to detect changes in the compositions of the protein fractions (WPI/MC) and to quantify losses due to aggregation/flocculation.
