P. speciosa seed has shown to be an excellent source of antioxidant
and antihypertensive peptides which could be developed as
a natural functional food ingredient or novel nutraceutical. The
parameters (i.e. temperature, S/E ratio and incubation time) studied
showed significant effect onto the production of the bioactive
peptide. Results showed that at a temperature of 50 C, a S/E ratio
of 50 and an incubation time of 2 h, gave the highest biological
activities. The peptide sequences of the bioactive peptide were also
successfully predicted.
