Chiapas cheese is a traditional raw milk cheese
prepared in the tropical State of Chiapas (Mexico) with
moisture of 48.2 %, pH of 4.03, salt concentration
5.34 % and a water activity (aw) of 0.972. On the
other side, there are many lactobacilli considered as
probiotics that are sold contained in food matrixes (as
L. casei Shirota, Yakult R
) or as food supplements
(as L. plantarum 299v, Protransitus R
). These LAB
are from human origin, and numerous studies have
been conducted to ensure their eectiveness and safety
