2.4.6. Statistical analysis
Data on pH, TBARS, SH content, microbial quality evaluation, sensory
evaluation variables were analyzed for treatment and storage days as
main effects and treatments by storage day interaction using the
mathematical model given below in a two way analysis of variance
procedure of SPSS 11.5.
Yijk = μ + Ti + Si + ðTSÞij + eijk
where μ is the general mean; Ti is the effect of ith treatment; Si is the
effect of ith storage day; (TS)ij is the interaction effect of ith treatment
with jth storage day; and eijk is the random error.
If a value of Pb0.05wasdetected in the storage day effect, differences
amongmeans were tested separatelywith a Bonferroni test. If a value of
Pb0.05 was detected in the treatment effect, variable means were
analyzed separately in one way analysis of variance.
