To emphasize the role of health or taste preferences in consumer ground meat demand, we focus the discussion on selected compensated own-price, cross price, and expenditure elasticities (Table 6) as well as seasonal purchase patterns. Six out of eight own-price elasticities show expected negative and significant reactions to price increases across ground meat products with different fat content. Price inelastic retail demand for extra lean ground beef confirms its status as a “food staple” in the Canadian diet. In contrast, highly price-elastic consumer reactions exist for “regular” ground beef and “regular” ground pork. While regular ground beef is a substitute for its extra lean counterpart, this relationship is much stronger for extra lean chicken (0.91).
