Standard procedures of the AOAC were used for proximate determinations, pH, total soluble solids, titratable acidity, Vitamin C and mineral content [10]. pH was measured using a Suntex electronic pH meter (model FF 701, Suntex Instuments Co. Ltd, USA). Total soluble solids was determined with a Bellingham and Stanley Delta hand refractometer. Potassium and sodium were determined by flame emission photometry (Jenway PFP-7, Jenway Ltd, England), calcium and magnesium by EDTA complexometric titration while phosphorus was determined by Ammonium Molybdate method.
