3.3. pH variation and cinetic growth
Table 1 shows the increase of pH in the screening test of strains
A, B, C and D. The initial pH of glutamate medium was set at 4.7.
After the incubation, it reached values above 6, indicating that there
was GABA production.
Bacterial growth for the different strains was very similar
(Table 1). The blank sample showed very intense growth
(6.3 109 cfu ml1), due to the natural LAB population that increases
spontaneously in the flour, while there was not a high increase
in the inoculated samples. This was due to the short
incubation time of samples.
