The proteolysis revealed a Michaelis–Menten type of kinetics
when hydrolyzing casein (Fig. 3b). The values of Km,Vmax, kcat and
kcat/Km measured from Michaelis–Menten plots, as shown in
Table 3a. As calculated from Michaelis–Menten plots, the Km and
Vmax were 16.8 lMand 82.6 lmol/min, respectively. The estimated
Km values indicated the affinity of enzyme toward the substrate.
Vmax is an indication of the catalytic activity of an enzyme which
is usually desired to be as high as possible.
