The most active purchasers of ‘local foods’ are however, not the food tourists, but the
holidaymakers who do not pre-plan, but once on holiday are keen to try out local foods and
specialities. This group does not distinguish between local and speciality and may in fact have
a loose definition of what is ‘local’, which will encompass more than the local produce and local
specialities that are the focus of this research. However, the research has demonstrated that
this group is strongly motivated to experience local foods and meals. This interest is carried
through to their choice of venue when eating out and their definition of the factors that turn a
good meal into an excellent experience.
