Protein is the most important nutrient for shrimp because it is directly related
to growth and energy requirement. A particular feed mixture combination
based on protein level of 40 % was selected. During extrusion, moisture content
of the inlet feed mixture and third zone barrel temperature were varied and
the response in terms of water stability, water absorption, bulk density,
expansion ratio and peak-shear force were measured. Optimization of process
parameters, in terms of response water stability was done by response surface
analysis and it was found that optimum extrusion condition occurred at 116CC
and 29 % inlet feed moisture level. The value of response at that condition
was found to be 8.5 %. Scanning electron micrographs showed extensive protein
denaturation and partial starch gelatinisation.
