From the visual point of view, the combined treatment induced a
slight drenched appearance, which was also observed by Prestamo
and Arroyo (1998) in pressurized cauliflower. Although we believe
that this change would not affect the acceptability of the product,
the general appearance could be improved by optimizing the level of
vacuum and the pressure applied. In general, changes in the chromatic
aspect of the surface during the application of HPP are more
likely due to physical phenomena than to instability of pigments
caused by chemical changes (Miguel-Pintado et al., 2013). Particularly,
the translucency effect perceived could be associated to the
known capacity of HPP treatment to change the cell permeability in
plant tissues, thus enabling movement of water and metabolites
throughout the cell
