Although the industrial applications of enzymes have been limited because most enzymes are relatively unstable, it is technically expensive to recover the active enzymes from the reaction mixture after completion of the catalytic process (Daoud, Kaddour, & Sadoun,2010). Ultrasound-assisted extraction is now a well-established technique commonly used in laboratories and in the industry (Ma,Chen, Liu, & Ye, 2009). Furthermore, up-scaling ultrasonic devices is quite easy, and it is cheaper than other extraction techniques such as microwave-assisted extraction or supercritical fluid extraction.
