Textural properties of the dried samples were measured
as puncture force with a Texture Analyzer (Model TAXT2,
Stable Microsystems, Oxford, UK). The values were
measured when an iron probe (P0.5) pass through a sample.
The following test parameters were used: pre-speed
and post-speed, 5mm=s; test speed, 2.0mm=s; trig. force,
20 g; distance, 3 mm. The maximum peak height of the
force-time curve was recorded to measure the breaking
force as g=force of the sample. The maximum peak force
is related to the hardness of the samples, and the first peak
force of the force-time curve is related to the crispness of
the samples. Hardness and crispness measurements were
determined with eight replications.
