saturated fatty acids (SFAs) from
50.15% (C) to 12.52% (DE-30) (P b 0.05). Decrements in the SFAs
fraction in double emulsion treatments were due to incensement of unsaturated
fatty acid concentration, mainly oleic and linoleic acid swhich
are mostly abundant in olive oil. Among SFAs, stearic acid was the most
abundant in C samples (23.89 g/100 g of product).
