Food waste is categorised under household waste, which means that it is generated from residential areas, restaurants, institutional cafeterias and kitchens and commercial areas. Food waste comes from the preparation of food and consists of fruit or vegetable residues, dairy, meat (including bones) and bread or other starchy foods. Almost all food waste is sent to landfi ll sites, where anaerobic processes occur and produce substantial amounts of methane gas and leachate (Lay et al., 1997; Scott et al., 2005).
