In conclusion, the initial microbial load of ICN is about 4 log CFU/g, and the major source is seasoning powder. From the results, 17 kGy of gamma radiation can control microbial safety of both seasoning powder as well as rehydrated ICN without impairing their sensorial quality. From these results, gamma irradiation could greatly contribute to prepare instant cup noodle for a meal for immuno-compromised patients who are hitherto restricted from consuming snack foods owing to the risk of food-borne diseases.
