Gamma irradiation was applied for creating cross-linked
proteins to enhance the physicochemical properties of an
edible coating based on proteins: methylcellulose. Peppermint
extract was added to the edible coating as a natural
antimicrobial. Results showed that coated strawberries had
only 40 % of decay while it was 65 % for the control after
8 days of storage at 4 C (data not shown).
