Characterization of purified invertase
Effect of pH and temperature on stability of invertase: It was observed by taking hundreds microlitres of appropriately diluted enzyme solution incubated in 0.05
M citrate/ 0.05 M acetate buffer at different pH values ranging for 2-8 at 40○C for 15 min. At optimal pH, the invertase activity was tested at varying temperature values (20-80○C). For this, the reaction mixture was incubated for 15 min at different temperatures and residual activity in both parameters was determined under standard conditions (Akgol et al., 2001).
