3. Results and discussion
3.1. Papaya seeds characteristics
Papaya seeds (see Fig. 3S) used for the drying experiments presented average diameter of Sauter (DSauter) of 3.24 ± 0.02 mm, sphericity of 0.77 ± 0.03, apparent density of 946.4 ± 8.5 kg m−3 and
initial moisture content of 79.0 ± 1.3% (wet basis). These values are in accordance with the literature (Mocelin et al., 2014). The detailed chemical composition ofthe papaya seeds used in the drying experiments is presented in supplementary material (Table 1S).
