On the occasion of His Majesty the King’s 60th birthday anniversary in 1987, cheese production equipment from the Netherlands was presented to him, and led to the construction of the Cheese Plant. Her Royal Highness Princess Maha Chakri Sirindhorn subsequently conferred the name of “Maha Mongkol Cheese” on the product obtained. Later, advice from the Danish experts was also obtained.
The Cheese Plant places emphasis on the studying of the use of raw milk to obtain various products. Firstly, whole milk can be used to produce Gouda and Cheddar cheese. Gouda and Cheddar cheese can also be mixed and reprocessed to producing processed cheese. Whole milk can also be used in ice-cream production by mixing it with sugar, flavours, emulsifier and stabiliser.
Secondly, the milk remaining from the skimming process can be used to produce low fat pasteurised milk, low fat drinking-yoghurt and low fat yoghurt.
Lastly, the cream or fat skimmed from milk can go to the production of butter and sweetened condensed milk.
