Trichothecenes. These mycotoxins are
produced by many species of the genus
Fusarium. They occur worldwide and infect
many different plants, notable of which are
the cereal grains, especially wheat, barley
and maize. There are over 40 different
trichothecenes, but the most well known
are deoxynivalenol and nivalenol. In
animals they cause vomiting and feed
refusal, and also affect the immune system.
In humans they cause vomiting, headache,
fever and nausea.
