Kohonen's ANNs used to interpret the results of the survey on
HACCP system allowed a thorough analysis of opinions of food
businesses employees designated to complete the questionnaire.
The obtained results suggested directions of corrective actions to
maintain food safety management system at appropriate level.
Analysis of declarations on HACCP principles using ANNs may have
relevance to the system effectiveness in practice. The obtained results
reflected the need for more good quality training as a result of
often declared misunderstanding of certain aspects of the food
safety management system and a small share of implementation of
HACCP principles without external support.
