2.1.2. Governing equations
Microwaves are a form of electromagnetic energy that penetrate
into food products and are converted to heat by interactions
with charged particles and polar molecules (Buffler, 1992). The
electromagnetic field in our simulation was analyzed by governing
the set of Maxwell’s equations as the following shown (Knoerzer
et al., 2008).
