The raw banana had green peel at the 5th stage of ripening and was selected to produce banana flour.
The riped banana had yellow
peel at the 7th stage of ripening and was selected to
produce banana puree. Both the flour and puree acted
as raw materials for film formation. Food grade of
ascorbic acid, potassium metabisulfite (KMS) and
glycerol were provided by Ajax Finechem Pty Ltd,
New Zealand.
