Spoon bread
This corn confection is known as spoon bread for the simple reason that it has to be eaten with a spoon. It is the consistency of custard and is puffy and creamy inside when cooked. The bread is made with cornmeal, a little white flour, egg, milk and baking powder. One story suggests that the bread was created when too much liquid was added to corn bread batter and the baked bread had to be spooned out of the pan. Be that as it may, the Virginians insist that event happened in one of their kitchens and thus claim spoon bread as their own. In Virginia or neighboring states, you will find this on the menu, occasionally as a desert but usually in a savory version, made with bacon, cheese and garlic.
