3. Results and discussion
3.1. Mango ripening characteristics
The appearance of the mangoes progressively changed over the
ripening incubation time, as illustrated in Fig. 1. At the beginning
(day 0), the mango was still raw. The peel appeared dark green and
the pulp was light white-green. Upon further incubation, the green
color of both parts became lighter, while the yellow color appeared
more vivid. The pulp also turned orange (a sign of full ripeness),
especially at the bottom part of the fruit at day 4. A few dark spots
(a sign of spoilage) were observed on the peel at day 4.
