3.3. Water holding capacity
The WHC of durum wheat debranned by-products is shown in Fig. 1. WHC is strictly related both to the amount of fibre present in each fraction, and to the granulometry of the material. The WHC increases with the amount of total fibre and a decrease with the granulometry. Therefore, fraction A has the highest WHC, while all sub-fractions “fine” constituted by material with the smallest particle size, have a low WHC.
