In the recent years the meat supply chain has been subject to a number of hygienic
problems, such as mad cow disease and Congo fever, which have adversely affected the
stakeholders in the meat industry, including producers, distributors, and consumers.
The problem could begin from the pre-slaughtering stage; continue through hygienic
inspection till consumption of the meat at home. By designing and implementing an
integrated performance measurement system for the meat supply chain, these
problems can be mitigated. In this regard, the following questions have been noted to
occur:
. What are the key performance measures for a meat supply chain?
. Which of the criteria and sub criteria for a meat supply chain are more
important?
. In this paper, we are trying to find solutions for the aforementioned questions.
3. Methodology
The research methodology in this study is comprised of three steps. First, we
conducted a comprehensive review on the precedent articles that study the relationship
between the performance measurement and supply chain. Our justification to review
these studies was to identify some indicators that can be used in the meat industry.
